salmon_paprikaThis recipe is super quick to throw together and the flavours really compliment salmon. The marinating step is optional as it still tastes great without marinating it.

 Orange or lemon rind, grated

  1. Optional marinade step: in a small dish mix orange juice and thyme; add the salmon to it to marinate for at least 30 minutes.
  1. Pre-heat oven to 200˚ C.
  2. In a small bowl mix together brown sugar, paprika, cinnamon, rind, salt and pepper.
  3. Take the salmon out of the marinade and discard marinade (if using). Rub the paprika mixture over the flesh of the salmon fillets and place in an ovenproof dish.
  4. Bake for about 10 minutes or until cooked through. It willt ake longer if using a very thick piece of salmon.


Serving Suggestion: serve with potato or rice and vegetables or salad.

Variation: add a dash of ground cumin and/or a pinch of chilli powder to the rub mixture.
