The 'per kilo' price may seem high for fresh salmon, but you only need a small serving (150g per person) for a satisfying meal, and it's incredibly good for you supplying lots of healthy omega-3 oils.

Method
- Pre-heat oven to 220 ˚ C.
- In a small bowl mix together wholegrain mustard, honey, lemon juice and rind.
- Rub the honey mixture over the flesh of the salmon fillets and place in an ovenproof dish.
- Bake of 5 minutes or until cooked through.
Microwave
- Prepare salmon as above and place in a microwave –safe dish.
- Cover and cook on medium-high power for 2-3 minutes for 1 serving and 4-6 minutes for 2 serves.
Serving Suggestion: serve with boiled or mashed potatoes and steamed vegetables or a salad.
