Unfilled sponge*

Vanilla custard or vanilla yogurt

3⁄4Cup

Slivered almonds, toasted

Whipped cream (optional)

* Freeze any leftover unfilled sponge.

Method

  1. Use a fork to lightly mash berries.
  2. Leave 1 strawberry for the top of each trifle. Slice the remaining strawberries and add to the mashed berries.
  3. Add sugar and wine / juice to the berries and mix well.
  4. Cut sponge horizontally in half to make it thinner. Use a pastry cutter to cut 2 circles of sponge to fit a tall glass.
  5. Place 1⁄3 of the berry mixture in the bottom of a glass.
  6. Top with a layer of sponge, press down firmly.
  7. Spoon 1⁄3 of the berries over the sponge.
  8. Pour half the custard over the berries.
  9. Top with a second layer of sponge.
  10. Spoon remaining berries over the sponge.
  11. Pour over remaining custard.
  12. Garnish with whipped cream, remaining strawberry and toasted almonds.
  13. Cover glass with plastic wrap and chill for at least 1 hour.
