A hearty, full flavoured lentil soup.

Medium potato, peeled and chopped |

Carrot, peeled and chopped |

Chopped tomatoes- canned or fresh |

Red lentils, rinsed under cold water |

Vegetable stock |

Method
- Heat oil in a large saucepan. Add onion and garlic and stir over medium heat until onion softens.
- Add potato, carrot, tomato, lentils and vegetable stock.
- Bring to the boil then simmer for 30 minutes or until vegetables are soft.
- Season with pepper.
Serving Suggestion: serve sprinkled with chopped parsley.
