 Onion, peeled and chopped

1 small

 Minced garlic

½ t

 Medium potato, peeled and chopped


 Carrot, peeled and chopped


 Chopped tomatoes- canned or fresh

½ cup

 Red lentils, rinsed under cold water

½ cup

 Vegetable stock

3 cups


To season



  1. Heat oil in a large saucepan. Add onion and garlic and stir over medium heat until onion softens.
  2. Add potato, carrot, tomato, lentils and vegetable stock.
  3. Bring to the boil then simmer for 30 minutes or until vegetables are soft.
  4. Season with pepper.


Serving Suggestion: serve sprinkled with chopped parsley.
