For a light and fluffy mashed potato topping choose a floury-textured potato such as agria, Ilam hardy, red rascal or desiree.

Potato Topping

Potato , scrubbed, peeled and cubed

Method

  1. Boil potato for approximately 20 minutes or until soft.
  2. Mash potato and add milk and margarine.

Fish Filling

Ingredients

Cheese Sauce Mix

1⁄2Packet

1 packet

Milk

1⁄4Cup

1⁄2Cup

Water

1⁄4Cup

1⁄2Cup

Canned fish-drained and flaked

Or

Fish fillet-cooked and flaked

1 x 95g can

or

1 fish fillet

1 x 185g can

or

2 fish fillets

Frozen peas

1⁄4Cup

1⁄2Cup

Hard boiled eggs

Cheese, grilled

Method

  1. Pre-heat the oven to 180o C.
  2. Combine cheese sauce mix with cold water and milk in a saucepan. Mix well.
  3. Bring to the boil, stirring; then simmer 2 minutes, stirring occasionally.
  4. Remove the sauce from the heat and stir in fish, hard boiled egg and frozen peas. Pour into a small ovenproof dish.
  5. Served with mashed potatoes. Sprinkle with grated cheese.
  6. Bake for 30 minutes.

Serving Suggestion: serve with baked pumpkin or steamed carrots and a green vegetable.
