Dahl is an excellent way to eat lentils. This is a mild, sweet Dahl with a slight nutty taste. Add more curry powder if you like your food hot!

Played red lentils, washed |

Method
- Heat oil in a saucepan on medium heat.
- Add wholegrain mustard and cumin and stir.
- Add carrots, stock and lentils and simmer for 30 minutes, stirring regularly.
- Stir in peanut butter, curry powder and pepper.
- Simmer for 5 minutes then serve.
- Garnish with yoghurt and coriander or mint.
Serving Suggestion: Serve on rice, naan or pita bread.
