Method
- Preheat oven to 190°C.
- Melt butter or margarine and allow to cool.
- Mix sugar with the cooled butter or margarine, lightly beaten egg and the milk.
- Mash banana and stir into the mixture.
- Sift flour, baking powder, baking soda and salt and add to the mixture.
- Mix lightly with a fork until just combined and stir in chocolate chips.
- Spoon mixture into muffin tins and bake for 20 minutes. For mini muffins, reduce cooking time to 10 – 15 minutes. To check for doneness after 10 minutes, insert a skewer into the centre of a muffin. If it comes out clean, the muffins are ready.
